Crispy Smashed Brussels Sprouts

2 lbs small brussels sprouts, cleaned and trimmed
2 Tbsp olive oil
1/4 cup nutritional yeast
1/2 tsp black pepper
1 tsp salt
Directions
- Bring large pot of water to full boil. Add brussels sprouts. Cook about 10 minutes, until fork tender. Using collander, drain and rinse with cold water. Dry.
- Preheat oven to 425°F
- While oven preheats, in a large bowl mix all ingredients.
- Spread out on baking sheet lined with parchment paper. Spread out. Use a cup to smash or flatten.
- Bake 25-30 minutes until crispy. If still not crispy and browned at 30 minutes, quickly broil them for 1-2 minutes until golden brown

- Dipping sauce suggestions: 50/50 mayo and pesto, or any aoili.
