Parsnips (about four large)
Carrots (about four to five large)
Olive oil (enough to lightly drizzle)
Salt & Pepper
Red pepper flakes (optional)
Directions
- Pre-heat oven to 425 degrees F.
- Peel and cut parsnips and carrots into small strips.
Four parsnips and five large carrots feeds about four people. - Place in large bowl, lightly drizzle with olive oil and toss. Sprinkle with salt and pepper and toss thoroughly. Add a small pinch of red pepper flakes – but don’t over do it.
- Spread on sheets. Keep layers shallow for crispness. Four people will require two sheets.
- Cook for 20 minutes. When plating, optional step to lightly dust with shredded parmesan.
