Parsnip Shoestring Fries

Ingredients

  • Parsnips (about four large)

  • Carrots (about four to five large)

  • Olive oil (enough to lightly drizzle)

  • Salt & Pepper

  • Red pepper flakes (optional)

Directions

  • Pre-heat oven to 425 degrees F.
  • Peel and cut parsnips and carrots into small strips.
    Four parsnips and five large carrots feeds about four people.
  • Place in large bowl, lightly drizzle with olive oil and toss. Sprinkle with salt and pepper and toss thoroughly. Add a small pinch of red pepper flakes – but don’t over do it.
  • Spread on sheets. Keep layers shallow for crispness. Four people will require two sheets.
  • Cook for 20 minutes. When plating, optional step to lightly dust with shredded parmesan.
