Ingredients
- 4 (6 oz) Boneless skinless chicken breasts
- 2 1/2 TBSP Olive oil
- 3 TBSP finely chopped shallot (or yellow onion)
- 2 cloves garlic (minced)
- 1 1/3 cups + 1 TBSP low sodium chicken broth
- 2 1/2 tsp Cornstarch
- 1 cup Sun Dried tomato halves packed in olive oil, drained, and finely chopped
- 1/4 cup heavy cream
- 1/3 cup finely shredded Parmesan cheese
- 3 TBSP chopped fresh basil
Be careful adding extra salt while cooking. Salt comes from the salt & peppered chicken breast, the parmesan cheese, and the chicken broth unless low sodium broth is used.
Modifications: Chop chicken into smaller chunks and use the sun dried tomato cream sauce with penne pasta, orzo, etc.
Chicken needs to be thin to cook thoroughly. Slice large breasts in half, or pound thin, or even slice into strips. Season the chicken with salt and pepper.
Heat 1 1/2 TBSP olive oil in 12 inch skillet (or larger) over medium-high heat
Cook chicken until slightly brown on each side. For breasts, 4-5 minutes each side. Strips will take slightly less time. This will cause a lot of splatter, so deal with it with a splatter screen, loose aluminum foil, etc.
Remove chicken and keep warm by wrapping in aluminum foil. Lower heat to medium.
Immediately add 1 TBSP olive oil to skillet. Add diced shallots, saute for 2-3 minutes until turning translucent.
Increase flame back to medium-high. Add garlic. Stir and saute about a minute.
Pour in 1 1/3 cups chicken broth to de-glaze the skillet and release the bits from the pan surface. Stir and scrape.
In a small bowl, whisk together 1 TBSP chicken broth and cornstarch. Stir mix into skillet.
Brink to a light boil stirring constantly.
After 1 minute of light boil, stir in cream. Stir in parmesan. Keep stirring until cheese melts.
Add chicken back to skillet. Turn off heat. Bathe chicken in sauce, spooning sauce over breasts.
Plating: Chicken, spoon sauce over chicken, sprinkle chopped basil. Serve immediately.
